Clean on the palate it is enjoyable as a drink or with lighter meals. From a winemaking point of view we use gentle irrigation of the cap in order not to extract any harsh tannins. The press fractions are kept separate from the free run and then separately aged in a mixture of French and American oak barrels for about 18 months. However in this vintage we blended them back upon the second racking as they were quite compatible with one another. The wine was bottled in early March, 1999. While this wine should continue to age well, it is ready to drink now. 750 cases made.
