Paumanok's '99 semidry riesling...is literally and figuratively...effervescent...Its slight spritz lends a lift to a flirtatious, peachy charm, which is typically found in newborn rieslings.

Reminiscent of a German kabinett, the riesling is main-course fare: chicken, pork, veal and, because of its slight sweetness, Asian foods.

Paumanok, in Aquebogue on the North Fork, has long made riesling an important part of its portfolio. The grape is planted on 13 of its 52 acres, and 800 cases of the '99 were bottled.

"We usually run out of it before the end of the summer," warned Charles Massoud, an owner.
