Reminiscent of a German kabinett, the riesling is main-course fare: chicken, pork, veal and, because of its slight sweetness, Asian foods. Paumanok, in Aquebogue on the North Fork, has long made riesling an important part of its portfolio. The grape is planted on 13 of its 52 acres, and 800 cases of the '99 were bottled.
