Winemaker Notes
This is the first vintage where we have made a second Chardonnay, this one with the Grand Vintage designation which we reserve for wines we think are truly exceptional. It comes exclusively from our "Aquebogue" block, the one we planted when we started in 1983. This clone is characterized by smaller berries and smaller conical clusters. It looks very much as if it is the Dijon clone. After 6 hours of skin contact the free run juice at 23.2 degrees brix was inoculated with CY 3087 yeast then transferred to brand new French oak barrels. CY 3087 was isolated in barrel fermentation in Burgundy. In the barrels it underwent malolactic fermentation and was stirred on the lees for the first three months. Then it was left to age for another 7 months before bottling. This wine was selected by Anthony Dias Blue as Bon Appetit Magazine's Best of the year and was featured in the January 1998 issue. It is soft, smooth, has a long finish and makes a great palate impression right from the first sip. It has a broad array of flavors ranging from honey, butterscotch and vanilla to ripe pear and apple. 420 cases made.
