Only 69 cases of Paumanok's top red wine, the 1995 Cabernet Sauvignon Tuthills Lane Vineyard Limited Edition, were produced, even though the label says 75. It offers a black color, and backward tar and licorice aromas. This full-bodied, chewy mouthful of a wine coats the palate with eucalyptus-tinged blackberries and black currants. It is an intense wine that leaves little to the imagination, yet it is immensely impressive because of its power and assertiveness. Projected maturity: 2002-2007.

The 1995 Tuthills recipe consisted of old vines (planted in 1982), very ripe grapes and only free-run wine: the sappy wine sluiced from tanks after alcoholic fermentation, and not mixed with sturdier press wine. The cabernet is dense with cedar, black currant and tobacco notes.
Winemaker Notes
The long title tells much of the story. The block from which this wine was made is on Tuthills Lane, which cuts through our vineyards. These vines were planted in 1982, the year before we planted our original vineyards. We subsequently bought this parcel in 1989. Due to the age difference and possibly clonal difference this block produces what seems to be a more elegant wine. In 1995 we fermented the batch from that block with the BM45 (Brunello di Montalcino 45) yeast, which is supposed to accentuate fruit flavors like plum and also enhances the mouth feel through the production of polysaccharides. The free run was kept separate from the press fractions and was aged initially in new oak barrels. After about 18 months it was bottled by itself and is 100% Cabernet Sauvignon free run from that Tuthills Lane block.
In a recent survey of the East End Winemakers by Howard Goldberg, this wine was identified as their favorite, more than any other. We think it shows what is possible with Cabernet Sauvignon on Long Island. Only 69 cases were made and a few larger bottles.
